‘No.6 yeast’ is the oldest sake yeast that currently exists found in 1930 at Aramasa shuzo, sake brewery in Akita prefecture.
It used to be treasured priceless from reasons of ‘being strong in cold climate’ and ‘Gives a finish of living soft scents and fresh acidity’
‘No. 6 yeast’ was a candle flickering in the wind, but it has attracted people’s attention now after origin regression.
We hold parties to take pleasure with cuisine using ingredients of Yamagata and sake made using this yeast at Takinami.
